Yeopo’s Winery exemplifies the potential of Korean viticulture, blending tradition with innovation to create wines that honor local terroir while achieving global relevance. Based in Yeongdong County, Chungcheongbuk-do, South Korea, the winery is exposed to continental climate marked by hot summers, cold winters, and significant diurnal temperature swings. This provides ideal conditions for grape cultivation. The region’s volcanic soils (rich in granite and basalt) contribute mineral complexity to the wines.
Yeopo’s Winery maintains 52 experimental grape varieties across 2,640 m² of vineyards, testing adaptability to Korean conditions. The winery avoids synthetic pesticides, emphasizing organic compost and cover crops for soil health. Their signature wine Yeoppo’s Dream is crafted with a blend of grapes fermented at low temperatures (12–14°C) in stainless steel tanks to preserve aromatic intensity.
The winery employs a smart filtration system with membrane filters and turbidity sensors to remove yeast and impurities, critical for producing crystal-clear white wines. This system, supported by IoT technology, allows real-time monitoring of flow rates and pressure.
