Dancing Cider sources locally grown apples, including Fuji and Honeycrisp varieties, prioritizing organic practices to ensure fruit quality. The region’s diurnal temperature shifts contribute to the apples’ balanced sugar-acid profile, critical for crafting nuanced ciders.
The production process begins with cold-pressed apple juice, fermented using both wild and selected yeast strains. Dancing Cider employs a mix of stainless steel and neutral oak vessels for fermentation, avoiding excessive technological intervention to preserve the fruit’s natural character. Their smart filtration system, equipped with IoT sensors, ensures clarity without compromising flavor.
