Winemaking Style

Yein Hwawon Winery is situated in Gyeongju, a region steeped in historical significance as the ancient capital of the Silla Kingdom. The winery’s location leverages the area’s unique microclimate and volcanic soils, which contribute to the distinct mineral character of its wines.

Yein Hwawon’s philosophy centers on natural winemaking, a method that rejects synthetic additives, industrial yeasts, and excessive technological manipulation. The winery adheres to organic farming practices, avoiding pesticides and herbicides, and emphasizes hand-harvesting to ensure the integrity of the fruit.

The Meoru NamSan Ae is Yein Hwawon’s most celebrated offering. Crafted from 100% Meoru grapes (Vitis coignetiae), a native Korean varietal, this wine is fermented using ambient yeast strains to enhance terroir expression. Wines are then aged for three years in stainless steel tanks to develop complexity without oak interference, allowing the fruit’s natural flavors to dominate and preserve its vibrant fruit profile. The absence of sulfites underscores the winery’s commitment to purity, though this approach requires meticulous hygiene and precise temperature control.
