Vino Castle Winery is located on the slopes of Yeongcheon Mountain, a region characterized by its "Macbanseok" soil—a volcanic substrate rich in minerals such as basalt and granite. This soil type, combined with the south-facing orientation of the vineyards, ensures optimal sun exposure and drainage, critical for cultivating grapes with concentrated flavors and balanced acidity. The area’s elevation, ranging between 200 and 400 meters above sea level, moderates temperatures, extending the growing season and allowing for gradual sugar accumulation while preserving acidity.

Chungsoo, the cornerstone of Vino Castle’s portfolio, is a white grape variety bred specifically for Korea’s climatic extremes. Its thick skin and compact clusters make it resistant to rot, while its high acidity and moderate sugar levels lend themselves to wines with vibrant freshness and aging potential. Chungsoo grapes thrive in rocky, well-drained soils and exhibit natural resistance to pests and diseases, reducing the need for chemical interventions.

For its Vino Festiva White, the winery uses stainless steel tanks for fermentation at controlled temperatures (12–14°C), a method that retains the wine’s aromatic intensity and crisp acidity. The absence of malolactic fermentation ensures that the natural tartness of the Chungsoo grape remains prominent.
